Slow Cooker Honey Mustard Chicken


Nothing beats the classic pairing of sweet honey and tangy mustard in this slow cooker chicken. Simple and delicious for a family weeknight meal!

I can’t get over using my slow cooker. I can set it and forget it, run errands with my daughter, or get some work done while dinner is cooking. Plus, the flavor you get from a slow cooker is so hard to mimic using the stove top or oven!

This honey mustard chicken is moist and has a mild sweet and slightly tangy flavor. It’s versatile – use bonless, skinless chicken breasts or thighs, try dijon or spicy brown mustard for a different kick, or serve it over rice or veggies. I like it best with lettuce wraps and my Paleo satay sauce.

INGREDIENTS

2 lbs. skinless chicken thighs (bone-in or boneless)

2 tablespoons coconut oil, melted

3 tablespoons honey

1 tablespoon prepared mustard (I prefer stoneground)

1 teaspoon madras curry powder

salt and pepper

INSTRUCTIONS

1) Place chicken in the slow cooker.

2) In a small bowl, mix coconut oil, honey, prepared mustard, and curry powder.

3) Pour the sauce over the chicken and cook on low for 4 to 5 hours.

4) Salt and pepper to taste.

5) Enjoy in lettuce wraps, with julienned carrots and my Paleo Satay Sauce.

Mexican Inspired Chicken Soup

This Mexican take on chicken soup is so delicious that it becomes difficult to enjoy chicken soup any other way!

Equipment

Ingredients

  • 1 teaspoon coriander
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1 teaspoon sea salt
  • 1/2 teaspoon fresh black pepper
  • 2 lbs. skinless boneless, chicken thighs, cut into 1.5 inch chunks
  • 1 onion thickly sliced
  • 4 cloves garlic minced
  • 2 medium zucchinis chopped
  • 2 carrots chopped
  • 1 bell pepper chopped
  • 2 medium carrots chopped
  • 1 tablespoon tomato paste
  • 5 cups chicken broth preferably homemade
  • 2 cups salsa preferably a simple tomato salsa

Optional Garnishes

  • cilantro
  • jalapeno
  • green onion
  • lime
  • avocado

Instructions

  • Combine the coriander, cumin, chili powder, salt and pepper. Toss the chicken with the spices. When the chicken is well coated, move it to the slow cooker.

  • Add the onion, garlic, zucchinis, bell pepper, carrots, tomato paste, chicken broth and salsa.

  • Cook on low for 4 to 6 hours, or until chicken is cooked through.

  • Adjust salt and pepper to taste.

  • Top with garnishes of your choice and serve!

Notes:

If you aren’t able to make homemade broth, I really love bone broth from Bare Bones. Their instant bone broth powder makes it super easy and convenient to store in your pantry!
