Normal restaurant fajitas are not Paleo due to the tortillas, dairy, and vegetable oils they’re normally cooked in. But that doesn’t mean you don’t get a craving for one once in awhile.
This Roasted Pork Fajita Salad made with tender roasted pork and vegetables is topped with a creamy coconut dressing that does a wonderful job of complementing the spices. You can use any type of salad green you like here; crunchy Romaine is nice, or you can use a dark leafy green if that’s more your style. You can also substitute chicken or beef for the pork if you like as well.
