Balsamic Braised Short Ribs – Up and Alive


Balsamic Braised Short Ribs

Prep Time: 15 minutes

Servings: 6 – 8

These beef short ribs are braised to luscious tenderness, while slow cooking in a flavorful balsamic sauce.

INGREDIENTS

  • 4 to 5 lbs. bone-in beef short ribs, each about 3 inches long
  • 2 teaspoons sea salt
  • 1 teaspoon black pepper
  • 2/3 cup balsamic vinegar
  • 1 cup dry red wine
  • 2 Tablespoons tomato paste
  • 1/2 cup red onions, diced
  • 4 cloves garlic cloves, minced
  • 1 carrot, chopped (optional)
  • 1 stalk celery, chopped (optional)

INSTRUCTIONS

1. Sprinkle the short ribs with the salt and pepper.

2. Then place them in the bottom of the slow cooker.

3. In a separate bowl mix the balsamic vinegar, red wine, tomato paste, red onions and garlic. Pour over the ribs. If using carrots and celery, add those to the slow cooker now too.

4. Cook on low for 6 to 8 hours or until beef is fork tender.

5. Adjust salt and pepper to taste.

6. Serve and enjoy!

Chef’s Tips:

  • If you have time, heat up 1 Tablespoon of ghee or coconut oil in a heavy bottomed pan and sear the short ribs on each side for 2 to 3 minutes before placing them in the slow cooker.
