- 1 ½ lbs pork shoulder
- 5 carrots
- 2 onions
- 2 celery stalks
- 4 cups parsnips
- 4 cups chicken stock
- 1 teaspoon dried sage
- ¼ teaspoon dried oregano
- ½ teaspoon paprika
- 2 tablespoon red wine
- 3 tablespoon cooking fat
- Salt and black pepper
How to Make Slow-Cooker Pork Stew With Parsnips
Melt the cooking fat over medium heat in a large skillet or Dutch oven. Brown the pork for 3 to 4 minutes, until browned. Pour the pork and onions into the slow cooker.
Now, in the skillet, add red wine and deglaze the pan, scraping the bits of food from the bottom of the skillet. Then, pour this liquid into the slow cooker.
To the slow cooker, add the carrots, celery, parsnips, broth, sage, oregano, and paprika. Add salt and pepper to taste. Stir the mixture, and cover. Cook for 6 to 8 hours on low heat.
Taste and season if needed before serving.
